My healthy microwave cake!
My healthy lemon-vanilla microwave cake, (low carb, sugar free, gluten free) (takes 10 minutes!)
As a family it is sometimes hard to keep to healthy eating habits, especially when one craves something sweet! We believe in low carb, gluten and sugar free eating, so I decided to compile a recipe for my own lemon vanilla cake!
I do not have all that much time to spend in the kitchen. But the day I felt like something sweet, I experimented and walla! Something yummy and healthy!
Coconut flour is a delicious substitute for wheat flour. It is gluten free and high in fat (specifically medium chain triglycerides) which is known to boost the metabolism and keep you fuller for longer.
The heba pap has a combination of a few very good ingredients including flax seed flour, sunflower seed flour and psylliam husk. Flaxseeds are low in carbs but remain high in fiber – which helps reduce sugar cravings.
Sunflower seeds are full of antioxidants and help to ease inflammation in the body- inflammation can cause asthma and joint pain. Sunflower seeds contain bone-strengthening minerals such as copper and magnesium (believed to soothe our nerves, ease headaches and stress). They are also a good source of selenium, which is proven to prevent cancer.
Here it goes! My lemon vanilla cake microwave recipe!
1/3 cup heba pap
1/3 cup coconut flour
1/3 cup desiccated coconut
1 tsp baking powder
3 eggs
60ml melted butter unsalted or olive oil
60ml honey or xylitol
60ml water
Icing
100g cream cheese
60 ml honey/xylitol
1 tsp vanilla essence
2 table spoons lemon juice (or to taste)
Combine all the cake ingredients with a fork in a glass bowl. (A large cereal bowl can work. I used a rectangular one before too.)
Put in microwave on high for 5 minutes
Remove the cake from bowl and allow to cool.
Icing: use a mixer to mix the above icing ingredients together. Allow cake to cool and apply.
